We went to a Demarle At Home party recently with my friend Stephanie who is a consultant (I LOVE their products- you can see more on her website). While we were there, she made these fish tacos from their catalog. Now if you remember, Hubby is NOT a fish eater but even he had these…plus seconds! Super, super good…can’t wait to eat them again.

Everyday Easy Fish Tacos

Prep time: 20 minutes, Cooking time: 15 minutes, Yields: 6 servings

  • 12 (5′) corn or wheat tortillas or large wonton wrappers
  • 3 TBS canola oil
  • 1 1/2 lbs tilapia or cod
  • 2 tsp sea salt
  • Dash of pepper
  • 2 tsp Demarle Zesty Mediterranean Herb Blend (or you can season to taste)
  • 2 tsp lime zest, grated
  • 3 cups shredded cabbage or lettuce
  • 2 cups mango, cubed
  • 2 ripe avocados, cubed
  • 1/2 cup chopped fresh cilantro or parsley
  • 4 green onions, thinly sliced
  • juice of 2 limes
  • 1 cup Greek yogurt
  • 1 TBS finely chopped canned chipotle pepper in adobo sauce

Place oven rack in center position and preheat oven to 375 degrees. Warm tortillas in the microwave for 30 seconds or until soft. Coat each side with oil and place in a large muffin pan letting the sides gently fold around the edges. SLice fish into 1′ cubes and place in a mixing bowl. Use grater to zest lime. In a bowl, combine the salt, pepper, Mediterranean blend and lime zest. Sprinkle the spice mix over the fish and coat well.

Begin filling the muffin first with the cabbage and then with the fish bites. Bake until cooked through, about 15 minutes.

In a bowel, toss mango, avocado, cilantro, green onions, 1/2 lime juice and salt to taste. In a second small bowl, combine yogurt, chipotle chilies and remaining lime juice. Serve fish tacos topped with mango salsa and yogurt blend. ….so yummy that you’ll be making more!
