Recipe: Karen’s Zucchini Pancakes
Earlier this summer, my Mom Karen sent me pics of her “first of the summer” Zucchini Pancakes. Hubby (FINALLY) has said he’s willing to “try” some veggies(!!!) so I’m excited about making these….here’s dinner tonight!
Karen’s Zucchini Pancakes
1/3 cup of Bisquick- ¼ teaspoon salt
- 1 teaspoon cinnamon
- ¼ teaspoon cloves
- ¼ teaspoon mace
- 2 eggs, beaten
- 2 cups shredded zucchini
- 1/3 cup chopped pecans
Mix dry ingredients together, add eggs mix until moist, fold in zucchini and pecans.
Cook on hot griddle 375o. Serve with warmed applesauce and/or syrup- makes 4 large cakes.
