On Sunday June 1st, we went to a Canada Day party (similar to our 4th of July). I LOVE a potluck- it’s fun seeing (eating) all of the goodies that everybody brings! I especially thought these Strawberry and Marshmallow Kabobs that Sarah made were cute- and a huge hit with the kids! If you add blueberries, they could easily use these for the 4th, too! 

Our host Carolyn made these yummy brownies that Hubby and I -literally- had to walk away from. SO good! When I asked Carolyn what they’re called, she said “we just call them brownies”. Oh, they are so much more than “brownies”- people were fighting over these! Since we had them on Canada Day and this recipe is from Carolyn’s friend Barbara in Calgary, we’ll call them Canada Brownies :)

Canada Brownies

This recipe is for an 8×8 pan. For a 9x 13 pan, double recipe but only 1.5 the icing


  • 1 1/2 cup brown sugar (unpacked)
  • 1/2 cup melted butter
  • 2 eggs
  • 1/4 cup coco powder
  • 1/2 tsp. vanilla extract
  • 1 cup of flour


  • 1/3 cup butter at room temperature
  • 1/3 cup coco powder
  • 2 cups of icing sugar
  • 1 tsp. vanilla extract
  • ~ 2 tbsp. milk

Mix brownies in the order given. Spread in a parchment lined pan. Bake at 325 for 35-40 minutes. Cream icing ingredients together until smooth then spread over the brownies while they’re still hot (honest!). Set aside to cool. If you don’t ice right away, heat the icing for 30 seconds in the microwave after it’s mixed and then spread on. Enjoy!
