I joined a group on Facebook where a bunch of us are baking our way through the Joy the Baker Cookbook. Of course, it happened at the busiest time- I was working an event and heading on a week-long New York trip! But when Hubby and I made them when I got back, I realized I could have totally whipped these out….they are that easy! For the recipe, you can purchase her cookbook on Amazon HERE (I bought the Kindle version for my phone) which is filled with 100 comforting recipes. There are a couple that I will be adapting due to Hubby’s taste so I will have “inspired” recipes coming every Sunday but this needed no alterations.

My 14yr old said his favorite part was the crust topping and the other two boys that were hanging out loved them, too (judging by how they ate them all by the time I got home). Mine took a little longer to cook than was listed but I did use a brand new stoneware muffin pan which I’m SO glad I ordered a couple months ago or I wouldn’t have been able to make this!! If you don’t know who Joy The Baker is, check out her Blog and Facebook page. Now it’s been awhile since I baked something from scratch (shame…I know) so I was pleasantly surprised that I had all the ingredients except the unsalted butter! I was all stressed on the part about browning the butter…mainly because if I messed up, I would have to go buy more! There were six sentences alone on how to “brown it” and my nose doesn’t always work so I was worried I would miss the nutty smell and burn it. I over think- it was nothing (if judging by the photo I did it wrong…don’t tell me)



We did get a little overzealous with the blueberries. It calls for two cups fresh and we had juuuust over a cup in each container. Know the old saying if ONE is good for you….well, it just meant we had a TON of blueberries making me want to rename ours Blueberry Brown Butter Muffins LOL

As I said before, my son LOVED the topping the best which I’m glad we didn’t scrimp on though at the time there seemed to be way too much of it. These were super yummy and were all gone in a flash! It only makes 12 so if you are feeding a crowd, double the recipe which you can get HERE. Thank you Joy!!!

      Thanks Ellen….especially since we had our town’s Relay For Life this weekend (I’m on the committee) and I missed the next one, too LOLOLOL I’ve loving doing this challenge though!

      They are SUPER easy, too!!! I’m a little behind so don’t worry- you’re not alone! I’m hoping to get caught up but this is a crazy week with our company hosting a Relay For Life team. They might all be getting avocado fries for the potluck LOL
