Nights like this is when I don’t feel bad when Hubby goes off to poker night because that means I can have all the “good” food he doesn’t eat….which we all know, is just about EVERYthing! That boy will only eat a tomato if it’s pureed! My mom Karen gave this recipe to me and she said it’s “…great for a quick dinner, or a leisurely brunch on the patio!”

Chicken Stuffed Tomatoes

  • 1 cup diced roasted chicken (or you can substitute 1 can Kirkland Costco Chicken)
  • 1/4 cup chopped celery
  • 1/4 cup chopped pickles
  • 2 table sp chopped olives
  • 1/4 cup chopped bell pepper
  • 3 table sp mayonnaise
  • 1 table sp Dijon mustard
  • 2 whole tomatoes

Mix all ingredients but the tomato together. Make three cuts along the top of the tomato, leaving it connected at the bottom. Remove as many seeds as you can without breaking the tomato then set on a bed of lettuce and stuff 1/2 the chicken mixture into each tomato.
