A girlfriend of mine has season tickets to the Mariner games and had some extra tickets so Housewife Dani and I were able to tag along. They call themselves “The Old Bats”- they are a great group and we had fun hanging out with them (I even got to be on the “big screen” while we were doing the Hand Jive during the 7th inning stretch!). I think we’ll have to dedicate a whole blog post on them in the future but in the meantime, I’ll tell you about the Baseball Birthday Muffins (aka Non-Muffin-Top Muffins) that Meri Kay made to celebrate one of the gal’s BDay. Which I’m SO grateful she made since the hotdog stand outside was closed when we left (BEST dogs- see copycat recipe for Seattle Cream Cheese Hot-Dog here).

These muffins are a regular thing in the Weight Watcher world but I’ve never actually had the recipe before. They are super, super moist- so good that you’ll want them with a glass of milk! Thank you Meri Kay for sharing :) and for letting us tag along to the game!

Non-Muffin-Top Muffins

  • 1 box carrot cake mix (or any “heavy” cake mix you have)
  • 1 tablespoon water
  • 1 15 oz. can pumpkin

Combine all the ingredients- it will make 12 cupcakes. Bake at 350 for 25 min… sometimes a little teeny bit longer as they are really REALLY moist. Leave them in cupcake tray and throw a towel on them for storage (if you put them in a ziploc bag, they are so moist that they sometimes mold). Meri Kay said she has made these with spice cake mix and also with chocolate. She likes them all but carrot is her fav! Can’t wait to try them all…
