I’ve seen these a couple times on Pinterest but haven’t known anybody I actually know to make them (and we’re not eating breads this month at our house so I can’t make them here!). My friend Melanie (who also gave us the Pickled Garlic Recipe) whipped these up and said they’re super easy and taste yummy, too!

Melanie’s Breakfast Cups

  • Spray Pam or butter (to grease the pan)
  • 1 small loaf of thin cut french bread (or you can use leftover pancakes)
  • 6-12 pieces of cooked bacon
  • Maple syrup
  • 6-8 eggs
  • 2 cups shredded cheese
  • Salt and pepper to taste

First preheat your oven to 375 degrees. Lightly spray your cupcake pan with Pam or rub butter inside the cups. Press a small piece of bread in each muffin; pressing it up the sides (Melanie said she used the french bread because she likes lots of crust but you can use a couple pancakes instead). Add a 1/2- 1 slice cooked bacon in each tin and add a squirt of maple syrup. In a bowl, scramble your eggs and then pour them into the cup- careful to not overflow since it will pop up. Sprinkle with cheese then bake for 10 mins at 375 degrees.
