I just love pizza and am really liking finding new ones to make it at home! This recipe is from Miranda Griffith who belongs to a group that I belong to. This is the perfect personal size pizza that “on the first taste you get the faint eggplant and the sweetness of the pizza sauce then the crunchiness of the onion. The best part it is sprinkled blue cheese!”. This reminds me of the Ratatouille dish I made….I may become an eggplant addict…

Eggplant Pizza

  • 1 egg plant
  • Pizza Sauce (Ragu Pizza Sauce was used this time)
  • 1 cup Mozzarella cheese
  • 1/2 an onion finely chopped
  • 1/2 a tomato chopped
  • 1 cup fresh spinach leaves
  • 1/2 cup blue cheese crumbles
  • salt and pepper to taste

On a cookie sheet just lightly coat with olive oil (or use a Pampered Chef Stoneware). Then cut the egg plant in 3/8″ slices and place on the cookie sheet in a circular pattern, slightly overlapping. Cover each one with pizza sauce then put on your mozzarella. Top that with your veggies and sprinkle blue cheese crumbles on top. Bake at 400 degrees for 20-25 min. Serve!
