These are just so pretty! And they taste yummy, too (though we have a huge fondness for coconut!). Carolyn made these for our Annual Cookie Exchange- I especially like how they look in the cellophane bags. Thank you for sharing!

Cherry Coconut Bars

From C Smith

Crust:

  • 1 cup flour
  • 1/2 cup butter
  • 3 TBSP brown sugar

Pat into 8×8 pan, bake at 350* for 25 minutes.

Mix:

  • 2 eggs
  • 1 cup white sugar
  • 1/4 cup flour
  • 1/2 tsp baking powder
  • 1/4 cup tsp salt
  • 1 tsp vanilla
  • 1/2 cup shredded coconut
  • 1/2 cup quaretered marachino cherries
  • 3/4 cup slivered almonds (optional)

Pour over crust then bake at 350* for 20 minutes then reduce to 300* for 30 minutes.
